Macaroni & Cheese

Ingredients • 1⁄2 gallon of whole milk • 1 1⁄2 sticks of butter • 1 cup of flour • 5 cups of cheese (any kind of cheese you prefer) I used mild cheddar, sharp cheddar, smoked gryuere, monterey, and colby jack • 1 tablespoon of Smoked Paprika • 1 tablespoon of garlic powder • 2 teaspoons of salt • 2 teaspoons of cracked pepper • 1 box of elbow macaroni

Instructions 1. Prepare elbow macaroni according to box instructions and set aside. 2. In a large pot melt butter. Once butter has melted add flour and combine with a whisk on medium heat. 3. Let the mixture simmer for 1 minute. 4. Add milk and combine with the whisk to ensure there are no lumps 5. Add garlic, salt, pepper, smoked paprika and combine with the whisk 6. Once milk is heated add 3 cups of cheese 1 at a time. Stir the milk continuously to ensure the cheese get distributed throughout and does not stick to the bottom 7. Once milk is thick and all the cheese is melted, remove from heat 8. Place the macaroni in the pan you are going to cook the mac and cheese in 9. Add the cheese sauce to the macaroni. You can add as much or as little as you like. Fold the cheese sauce into the macaroni. 10. Fold in 1 cup of cheese to the macaroni and cheese mixture. 11. Add the last cup of cheese to the top and bake on 350 degrees for 25 minutes or until the cheese is fully melted and golden. (You can also add small amounts of butter to the top for perfect browning)
